Elden Ring is tough as nails, but you can rope in friends and randoms to help out. One player even got famous for soloing the most difficult boss in the game for complete strangers. Failing that, there are Spirit Ashes, corporeal animals and enemies that you can enlist to help you in fights. They're supposed to compliment your own abilities as you take on the bosses side-by-side, but one player is trying to beat the game with nothing but Spirit Ashes, Pokemon style.
They started this run on YouTube Shorts, getting the Jellyfish from just outside Stormveil castle. Then they picked up the Lone Wolf from Ranni and got to work on fighting their way through Fort Haight. However, if you know anything about these early game Ashes in particular, you'll know they're quite squishy.

It doesn't take much to kill them, especially when it comes to boss fights. The early Ashes are mostly good for keeping aggro, stopping enemies from ganking you while you focus on the main fight. If you're only using Ashes, this is where things get tricky, but @bandanasteve has a workaround - they're playing as a cleric, and so they can heal their Spirit Ashes to keep them alive while they work.
One of the first bosses they take on is Farum Azula, summing the wolves who immediately get slapped around and lose a good chunk of their health. As such, @bandanasteve places themselves in the middle and begins healing in a wide circle, taking a few hits themselves. Imagine Pokemon battles if the trainer continuously got caught in the crossfire - it'd probably be a less popular pastime. Regardless, the wolves eventually take down the boss, ending with all three still alive.
