It's pretty much expected nowadays for the majority of the big fighting games to have some kind of cross-play support, what with them being primarily multiplayer focused experiences. Street Fighter 6 had crossplay at launch, as will Tekken 8 when that releases next year, but it seems like Mortal Kombat 1 fans will have to wait a little bit before they can go a few rounds with someone on a different platform.
It was speculated that Mortal Kombat 1 wouldn't have cross-play support at launch due to there being absolutely zero mention of feature on the game's FAQ page on its official website, but it's now been confirmed by NetherRealm that it won't be available until later on. It explained in a recent tweet via the Mortal Kombat 1 Twitter account that the team is currently "hard at work" on the feature and it will be coming at some point post-launch.

Unfortunately, a date for the introduction of cross-play support wasn't given, but we can probably assume that it won't be too far into the future given how much of a key feature it is for fighting games in general. For now, you'll have to either settle for playing randomers online, or you could use the time between now and launch to ensure everyone you want to play with buys the game on the same platform.
In fact, the launch of Mortal Kombat 1 isn't even that far away, as those who have purchased the Mortal Kombat 1 Premium Edition or Mortal Kombat 1 Kollector's Edition will be able to sink their teeth into the game later this week on September 14. For the rest of you, Mortal Kombat 1 will be available to purchase and download on September 19.
