Baldur's Gate 3 has a hidden mechanic called Karmic Dice that's switched on by default that you're going to want to turn off if you're looking for the true Dungeons & Dragons experience.

Essentially what this means is that having Karmic Dice activated, which the game does for you by default, means that you won't see a string of successes or failures, as they'll be more balanced out and jump between failure and success. This is meant to ensure that no run of the game has you winning or losing too much, but it basically takes away the RNG element that Dungeons & Dragons is so known for by mixing up your failure rate.
