In order to find a bounty, look for the red handcuffs icon on your map. Each bounty will be displayed with the target's name and the dollar amount you'll receive for beating them. In general, higher rewards correlate with higher difficulty, but you can also see an exact difficulty rating (out of five fists) by walking up to the bounty target and interacting with them. You can still back out at this point if they're too tough. From there, though, it's just a matter of beating them in combat. You'll claim the rewards immediately.
