Baldur's Gate 3 has 11 species to pick from, but modders have taken it upon themselves to add even more from across the Dungeons & Dragons multiverse. There are more Faerûn picks, as well as species from Eberron, Krynn, Etharis, Malipāla, and Eorzea, finally letting you play as goblins and aasimar, among over 50 others.
Courtesy of Dungeons and Souls, 'Fantastical Multiverse' "adds a total of 54 races to the game, from 5th Edition and One D&D". There are even homebrew Final Fantasy 14 species (thanks, IGN).

To install the mod, you only need the fan-made 5e Spells add-on. However, Fantastical Multiverse is still a work-in-progress. There are plans to add even more species to that list, such as the following: hobgoblin, kenku, lizardfolk, tabaxi, tortle, owlin, leonin, warforged, loxodon, simic hybrid, ardling, dragon-touched, drakovian, balverine, viera, hrothgar, lalafell, au ra, miqo'te, ascian, leszi, askios, tensen, gnoll, fetching, automaton, azarketi, and vishkanya.

This mod has been in the works since November 2021, but it finally launched its full release on September 2. That means it works yet again in the full release as it once had in the early access build, but now with even more species to choose from. Of course, if 54 new species across Dungeons & Dragons, homebrew, and the multiverse don't tickle your fancy, there's an entire category dedicated to races on the Nexus Mods page.
You can get overhalls for each of the existing species, such as githyanki, elf, and human, or you can become a werewolf via a potion added through LostSoulsman's mod. Essentially, it's a wildshape
