The dish is made up of tomatoes, hard-boiled eggs, olives, anchovies or tuna, dressed with olive oil or in some sort of vinaigrette. Over the years, there have been several renditions of the Nicoise salad, but it always depends on the season. During the spring, chefs may add freshly harvested blanched haricot verts, while others include chopped red bell pepper, minced shallots, and steamed artichoke hearts. To make this dish heartier, some chefs even add steamed potatoes. So far, it seems RHOBH's Erika and Dorit made a good choice with the Nicoise salad.
