There are some species of Pokemon that are the same species and have the same base stats, but look different. Pokemon that have different appearances are classified as Pokemon with different forms. This is similar to gender differences, in which one Pokemon may have different tail shapes or patterns. Unlike gender differences, most Pokemon with form differences can be male or female. Shellos is a Pokemon with different forms that debuted in the Sinnoh region, thus it's only natural it would appear in Pokemon Legends: Arceus as well.
Two types of Shellos exist in the Pokemon world: West Sea Shellos (pink) and East Sea Shellos (blue). In Pokemon Legends: Arceus, trainers will have access to a Request from Anthe of Jubilife Village's clothing store. This is Request 45: Shellos of the East and West, and, as trainers may have guessed, it entails showing the West Sea and East Sea Shellos to Anthe.

Before trainers can start Shellos catching for Anthe, they'll need to have completed Request 24: Inspiration from Hippopotas. Anthe's second Request, Request 45: Shellos of the East and West, becomes available once trainers are set to go to the Cobalt Coastlands.
Completing both of these unlocks more clothing in Jubilife Village's clothing store.
The West Sea Shellos is the pink-colored Shellos, and it's the first one that players can catch. Exploring the far-south of the Fieldlands Camp in Obsidian Fieldlands across the river will lead to Sandgem Flats. Even further south of Sandgem Flats is the coast where West Sea Shellos and West Sea Gastrodon can be found (refer to the yellow Poke Ball pin on the above image).
