This is a general ranking and will take into account the Delve and Storyline that are active from a solo DPS PoV. Since you only have a limited number of Restored Coffer Key anyways, if you skip a really tough delve, you can always use it on a different delve on a different day.
These rankings are for SOLO players, as Delves are just infinitely easier in a group due to extra healing, interrupts and other factors. If you are struggling with a Delve, you can try to find a group and it should be much easier.

- Spiral Weave (S Tier)
- Nightfall Sanctum (A Tier)

Spiral Weave (S Tier)
The Spiral Weave today is a very straightforward delve with small groups of mobs at a time. Any standard caster mob that casts a «bolt» (i.e. Web Bolt) will ~1 million damage, so interrupt and focus these casters down, especially when there's a lot in the same pack. Otherwise, there is no typical boss in this Delve and the final encounter is 3 waves of mobs with the final one being a creature with about a third of the health of a typical Delve boss.
Nightfall Sanctum (A Tier)
Similar to Spiral Weave, this Delve has small packs and can be handled relatively safely until the final boss. This boss is very real and has two phases, the second one being much more deadly.
