Including Batwoman in Gotham Knights would instantly make the game better, both in terms of story and relevancy. Although Batwoman is not discussed as much as some other Bat Family members such as Robin and Catwoman, she is still an important member of Batman's inner circle. There are key roles that she would be able to play in Gotham Knights if she is included, including even possibly leading the team.
Kate Kane is Bruce Wayne's cousin, and she also comes from a very privileged upbringing. As an adult, she was inspired to become a vigilante after seeing Batman in person. Using the combat training that she gained from her military veteran father and his squad, she became the vigilante Batwoman. She takes a more aggressive approach to fighting crime than Bruce, but the two of them ultimately share the same ideals when it comes to making Gotham City a safer place. Considering that the Court of Owls is in Gotham Knights and taking advantage of Batman's disappearance, Batwoman's expertise would be more than welcome in the fight against Gotham's criminal underworld.

Batwoman has some strong connections to the Bat Family outside of being Bruce Wayne's cousin. In Detective Comics Rebirth, when Batman put together a team of heroes including Cassandra Cain, Spoiler, and a reformed Clayface to help him fight crime, Kate helps to train and advise them for their mission. Although she and Batman may not cross paths incredibly often, it's clear that they respect and trust each other greatly and she's as much a member of the Bat Family as Batman's greatest student in Gotham Knights, Nightwing.
