Engineering
Engineering changes quite a bit in Cataclysm Classic but thankfully, it is still the strongest option for dungeon and raid utility to maximize our tanking ability. Engineers will be able to craft Reinforced Bio-Optic Killshades that can be socketed with Engineering unique gems called cogwheels. These cogwheel slots are highly customizable and can give bonuses like Fractured Cogwheel and Quick Cogwheel.
Alchemy
Alchemy becomes a stronger profession in Cataclysm due to the introduction of new profession specific craftable trinkets. The choice for Blood Death Knight is Lifebound Alchemist Stone due to Stamina and Mastery stat bonuses. This trinket is a strong starting trinket that can be used before you even hit level 85 and won't be replaced until you see Symbiotic Worm drop and have acquired Mirror of Broken Images / Mirror of Broken Images from their respective Reputations.

Engineering is, yet again, the largest possible damage increase you can acquire throughout Cataclysm. Engineering offers a powerful helmet Reinforced Bio-Optic Killshades starting from Phase 1, which lasts well into the first tier of raiding. It also offers you Cogwheels, which are Engineering-specific gems granting 208 of a secondary stat, which you can use two of in your helmet. Besides this, it grants you access to explosives that you can use to squeeze in an extra bit of damage.
