The Witcher season 3 has reportedly cast Ryan Hayes, Michalina Olszanska, Harvey Quinn, Poppy Almond, Kate Winter, and Martyn Ellis alongside returning stars Henry Cavill, Freya Allan, and Anya Chalotra. We know a little about who they're playing.
As reported by Redanian Intelligence, Hayes is playing Artaud Terranova, one of the mages who incited the Thanned coup in an attempt to capture Ciri. He's a member of the Brotherhood of Sorcerers, even managing to reach the Chapter of the Gift and the Art, the highest rank. Hayes is known for his roles as Constable Thatch in Carnival Row and Angus in Macbeth (2018).

And Martyn Ellis, who you may know as Blakeman from The Sarah Jane Adventures, CI Grove from It's a Sin, and Albus in Elden Ring, is joining The Witcher season 3 as Barker. Both are new characters for the show.
Finally, The Witcher season 3 has cast Cherry Pickers and Drifters actor Harvey Quinn as well as Seasons and Blurred Lines actor Poppy Almond who are speculated to be playing mages given that they were spotted in scenes with
