Stats aren't everything when it comes to Elden Ring. Far more important is your ability to dodge enemy attacks and take advantage of their weaknesses. That being said, having good stats will help you survive longer, wield better weapons, and cast the most powerful sorceries and incantations.

Like some of FromSoft's previous games, there is a specific way to level up. You don't gain experience from defeating enemies or turning in side quests, you'll have to instead spend your hard earned runes. Which, to be fair, you can get from defeating enemies. Here are the ins and outs of leveling up.
One of the first things you'll learn in Elden Souls is that you are maidenless - multiple NPCs will comment on this and veterans of the Soulsborne games will take the hint that in Elden Ring, you level up by speaking to a certain NPC - a maiden.
To meet the character who will become your maiden, you will need to visit three Sites of Grace in the main world of Elden Ring - that is, not inside a dungeon. She will offer you a deal and become your maiden if you accept. This means that you can use her services to level up by spending runes.
To reach three Sites of Grace in the quickest possible manner, follow these directions.
• From the building on top of the Stranded Graveyard where you first start the game, walk forwards a little and you should see The First Steps Site of Grace in front of you.
• Head north from The First Steps and you should be able to see the ruined Church of Elleh. The second Site of Grace is inside.
• From the church, follow the path to the northeast but do not enter the Gatefront Ruins. Instead, veer to the east until you can spot the third Site of Grace to the north. This is Aghe
