This week, Sony is finally adding Variable Refresh Rate (VRR) support to the PS5, and confirmed at least 15 games will be patched to take advantage of it soon.
VRR allows the refresh rate of a game to continuously and seamlessly vary, which eliminates stutters and screen tearing. The end result is graphics that can look crisper and smoother, with an added bonus being reduced input lag in some cases.
Taking advantage of VRR requires PS5 owners to be using a TV or monitor that is HDMI 2.1 VRR-compatible and games need to be patched to support it. Sony is ensuring there is initial support by confirming 15 games are receiving VRR game patches "in the coming weeks."

Deathloop
Destiny 2
Devil May Cry 5 Special Edition
DIRT 5
Godfall
Marvel’s Spider-Man Remastered

Ratchet & Clank: Rift Apart
Resident Evil Village
Tiny Tina’s Wonderlands
Tom Clancy’s Rainbow Six Siege
Tribes of Midgard
Microsoft introduced VRR for the Xbox One first, with both the Xbox Series X and Series S boasting it as a feature since launch. Sony will be very happy to remove that feature advantage Microsoft had, but it also needs more developers to take the time to patch in support to existing PS5 games. No doubt it will become an expected feature of all future game releases.
Sony hasn't specified exactly when VRR support will be added to your PS5 other than confirming a global console update is being launched this week. Once installed, VRR will appear as an option you can toggle on or off in the "Screen and Video" settings. It will be automatically enabled if your display is detected as HDMI 2.1 VRR-compatible.
