@HeavyMetalWario64DS If you want to give Final Fantasy 3-5 a chance again, I suggest the Pixal Remaster version. You can toggle random encounters off and on plus adjust the XP and gold rate.

Another game that comes to mind is Secret of Mana on PS4 along with Trials of Mana.

@HeavyMetalWario64DS I also highly recommend Dragon Quest XI S.

You can set it to be turn based or adjust it to be more free flowing. All the random encounters are visible on the overworld & can be avoided.

I do have DQ XI on PS4, not sure if it is S though. Still seemed like a fun game from the little I played it. Might pick it back up sometime, but currently working on Mass Effect 2 and Lego 2K Drive.

I do have the Wii VC version of Secret of Mana, but not Trials. I also have Legend of Mana on PS1.
