Following the gameplay reveal just a few days ago, Motive has detailed all of the gameplay changes that are coming to the Dead Space remake, some of which have previously been mentioned in developer diaries, and others that seem to have just been revealed for the first time.
Earlier today, Motive shared a new blog post on the Dead Space website titled "Inside Dead Space #1: Remaking a Classic", seemingly starting a new deep-dive series. The focus of this blog seems to be detailing all of the changes that have been made to the game within the remake, including the "Peeling System", improvements to the zero-gravity sections, and an intensity director that dynamically changes the game as you play.

By far the most interesting thing that's detailed within the post is the Peeling System, especially considering how important gore and dismemberment are to Dead Space. According to the blog, all of the Necromorphs have been "reconstructed" around the system, which gives them layered flesh, tendons, and bones that "break, tear, and shatter". Grim, but perfect for Dead Space.
The next addition highlighted is the Intensity Director, which will change what happens in-game dynamically depending on how the player is doing, including changing Necromorph spawns and attacks, and even environmental effects. It also mentions that Isaac's breathing and speech will change depending on his stress, which is actually something that was detailed in a developer diary a few months ago.
