When the crew obtains the guests’ preference sheet, it is up to the chief stew and chef to make sure they have everything they ask for.
When guests are unhappy with the quality of the food, they are quick to let the staff know. Below Deck Sailing Yacht season 3 charter guest Erica Rose’s husband Charles Sanders went on a rampage over his omelet, yelling about how there were tomatoes in it. However, Marcos just calmly took it in stride and knew that there was no pleasing some people. Another group of charter guests requested a ten-course dinner for eight guests. Marcos was a bit taken aback at having to make eighty plates of food by himself, but he was able to pull it off and wowed the guests.

Marcos' fans can now taste his food at his restaurant Marlou, which is located in downtown Los Angeles, California. Marcos opened the restaurant with fellow chef Louis Huh, who has competed on Food Network. The two chefs have worked together before and created ML Eats, which offers private chef events, catering, and a food truck. Their food became so popular that Marcos and Louis decided to open a brick-and-mortar restaurant.
