They were created by the highly advanced species known as the Isu and react with the network of neurotransmitters the Isu engineered into human brains in the distant past. Most of the Pieces of Eden are used to control human thoughts, emotions, and even actions, and the Swords of Eden are no different.

Redditor DaffierLime shared a photograph of their attempt at recreating one of the Swords of Eden. It takes the form of a double-edged sword that is mostly gold with an uneven white streak down the blade. This recreation is incredibly detailed, featuring texturing along the blade, an intricately designed hilt, and a seemingly sharp point. The Swords of Eden are some of the most powerful Pieces of Eden found in the series, and this attempt at bringing one to life is very impressive.
Although it may look like this sword was created with actual metal, this is not the case. According to DaffierLime, this design was 3D printed using Polylactic Acid, one of the most common materials used in 3D printing. This specific Sword of Eden is the one seen in Assassin's Creed Unity, but there are several Swords of Eden found throughout the series.
