While it's true that Amiibo production has slowed down drastically from its fever pitch several years ago, in-game functionality still pops up often. By far the most impressive prize you'll acquire through any Amiibo is the Monado, provided by none other than the original Xenoblade hero himself. Scanning a Shulk Amiibo gets you a "skin" for the Swordfighter's weapon that transforms it into the famed Monado.
Do note that you can acquire this in-game as well, but only through New Game Plus. It's nice that the option is there for folks who would rather not track down a years-old action figure, but you'll get immediate access to the cosmetic if you do happen to own a Shulk of your very own.
All other Amiibo provide players with one of 21 sets of items. As far as we can tell, the results are random rather than tied to specific figurines.
