At the time of this writing, it doesn't seem to be possible for players to add boss monsters to their dungeons yet. There is a myriad of other enemies available that players could use to create boss rooms of some kind, but no super-powerful opponents that could be called bosses in their own right.

We do know that bosses are available in-game, though, as the dungeons built by developers feature bosses. As a result, we suspect that the option of adding bosses to your dungeons will be added to the game in the near future. There are promotional videos online that show a dungeon-builder adding a boss to a room.
Whenever bosses do become available in the game, this guide will be updated to detail how exactly they work and what the player needs to do in order to add them to a dungeon.
