The mouthful that is Grand Theft Auto: The Trilogy - Definitive Edition launched disastrously when it came out last year, with bugs galore including some awful rain effects, glitches, and a general lack of polish that players couldn't abide. The "Definitive Edition" was no such thing and it became one of the lowest scoring titles of 2021.
The game subsequently received patches, toning down the rain effect for example, and fixing things like object detection, but it's been quite a while since the last update. In fact it's been eight months, but the latest 1.04.5 patch update doesn't seem so definitive either. Here's the full patch note from the official site: "Stability improvements across all three titles on all platforms". And that's it. No more, no less (although it would be something to be even less).

The Trilogy - Definitive Edition includes GTA 3, Vice City, and San Andreas, while all platforms would include PS4, PS5, Xbox One, Xbox Series X/S, Nintendo Switch, and PC – so at least no platform can feel left out.
The patches aren't too big, tending to be a few hundred megabytes, but it'll need full game redownloads on PC just like previous updates (via Gamesradar and Rockstar Intel). Digging into the patch, there seems to be not much of note as players have looked through to find changes. There's little that stands out and actually glitches still remain in the game. Players were rightly annoyed at the extent of buggy glitches that came with the Definitive Edition (and surely it was hubris to launch the trilogy with such a moniker), it seems that Rockstar simply handed too much work to Grove Street Games,
