Even though the main goal of Cuphead is to take down the bosses, it's easier said than done, especially when you don't have a lot of options to fight. Thankfully, though the Peashooter is a reliable weapon, it can be limited which is why other kinds of Weapons are available.

They can be obtained from the shop known as Porkrind's Emporium, which has a location on every island. However, Porkrind is running a business and will charge you several coins in order to buy one of his Weapons or Charms, so you'll need to start collecting and saving up coins.
Coins are the only collectible that you can get in Cuphead, but they're not always easy to find. The most profitable place to get coins are the Run n' Gun levels. Each has five coins scattered throughout and with six levels, providing 30 coins in total. Both the base tutorial and Ms. Chalice's tutorial offer a coin each.
Another way to get your hands on some cash is by talking to NPCs. Some of them, such as the Apple Kid on Isle One and the Paperboy on Isle Four will give you coins just for talking to them. Then there are NPCs like the Lollipop girl on Isle Two and the Juggler on the same one who will give you a coin for completing certain tasks (finding a shortcut and performing four parries in a row, respectively).
Then there's a new rewarding way to get coins introduced in The Delicious Last Course DLC. In addition to the bosses, there's a new challenge in the form of the King's Leap. At certain points on Isle Four, a rope ladder will descend allowing you to reach a King in the sky. He will challenge you to defeat all of his champions without Weapons or Charms. If you manage to defeat all of them, you'll gain a total of 11 coins.
